INSPIRING IMPRESSIONS
Early this morning, while giving my dog a cuddle, I got the distinct waft of 'stywe pap'... and so I made a pot of that. It is easy to do, but it just takes some time - fortunately the sort of time you can set a timer for and carry on with the rest of the day.
LAZY MAN'S STYWE PAP RECIPE
Ingredients:
1 litre of water
2 tsp salt
2 tsp butter
2 cups of maize meal
Instructions:
1. Bring the water, salt and butter to a boil;
2. Remove the pot from the heat and turn the heat way down to setting 1;
3. Gradually pour the maize meal into the boiled water while stirring with a wooden spoon, don't worry it will still be clumpy;
4. Put the lid back on and place the pot back on the heat and leave to slowly cook for an hour;
5. Give it a stir, replace the lid, turn off the heat and leave it on the element till required, it can stay warm for quite long like that;
6. Serve to your liking.
Anyway, I was not really after the fluffy inside (though no doubt I will be having some tomorrow morning with cinnamon sugar and milk) but rather, I was craving the golden crust that forms at the base of the pot - the part many people toss to the dogs. I had another harvest of cherry tomatoes, so I fried that up with an onion and some fresh thyme from the garden. To that I added two eggs, sunny side up, and tossed the lot on top of a piece of 'stywe pap' crust. It was genuinely delicious, gooey and indulgent with just the right flavour and texture balance. In future, some fried bacon or sausages would be a good addition too - an African style continental breakfast. Obviously, I could not forget my muse - the delightful creature who set the whole process into being - Gabriela. So I kept her some leftovers from my plate. Clearly, I'm not the only one killed by anticipation - but just how adorable is that expression!?!
