EASY CRUMPETS
While transcribing some paper journal entries into digital format recently, I came across a sweet dream where crumpets featured, so thought I'd share the recipe here.Ingredients:
1 cup cake flour
1 1/2 tsp baking powder
1 1/2 Tbsp sugar
1/2 tsp salt
1 egg (beaten)
3/4 cup of milk
1/2 tsp liquid sweetener (golden syrup or honey)
1. Sieve together the dry ingredients;
2. Add the milk and sweetener to the egg;
3. Mix together all the above ingredients till smooth;
4. Stir in the butter and let it rest for 10 minutes;
5. Add a bit of oil to a heated pan, just enough to smear the surface;
6. Ladle spoonfuls of batter onto the heated pan and allow it to cook on medium to low heat;
1. This recipe works for both sweet or savoury toppings;
2. It freezes well and can be left to thaw or reheated in a toaster;
3. Add a teaspoon of ground cinnamon to the dry ingredients to give it more of a waffle flavour;
4. I like to flatten mine with the spatula on the flip side, to ensure even colouring.
